Starter cultures are added to pre-heated milk in large mixing tanks. Uniform dispersion is vital for consistent fermentation, and high-shear mixers—such as systems incorporating the Colloid Mill GlobeCore—help achieve an even distribution of cultures, which in turn results in a consistent acidification and flavour profile throughout the batch.
