Beef fat is rendered by dry or wet heat processing at ~100°C to separate fat from protein, bone, and tissue. The liquid tallow is then filtered to remove solids and dehydrated to reduce moisture content. If free fatty acids (FFAs) are high, acid esterification may be needed before transesterification. For biodiesel production, refined tallow is ideal.
