Aging the mix allows proteins to hydrate and fat to partially crystallize, improving the emulsification process and resulting in a smoother texture. A well-aged mix, when further processed by the Colloid Mill GlobeCore, achieves an even finer emulsion, which contributes to a superior mouthfeel.
